For Christmas, Michka gave me her recipe book. All the recipes she has gathered along the way from the people she has met and from cooking with those close to her. There is everything in it: recipes that are a little complicated, for the great occasions, but above all perfectly simple ones, sometimes even written by children. Those are the ones I love in particular, easy to make and always a pleasure to read again.

Thanks to Michka, I am sharing with you the recipe for Aunt Minette's Greek-style chicken.

For 4 people
- 1 chicken of 1 kilo 400 grams, jointed
- 2 shallots
- 3 cloves of garlic
- 3 medium tomatoes
- 2 glasses of dry white wine
- 2 pinches of saffron
- 1/2 tablespoon of curry powder
- 1 teaspoon of sugar
- 100 g of raisins
- a little flour
- 25 g of butter
- 1 tablespoon of olive oil
- salt and pepper

Flour the pieces of chicken and put the butter and the oil on top
Chop the onions, the garlic and the shallots
Add them to the chicken and brown, letting it colour
Peel the tomatoes and cut them into pieces
Add salt and pepper, stir and leave to cook uncovered
Pour over the white wine
Bring to the boil
Add the saffron, the curry powder, the sugar and the raisins

I would add that you can serve it with a little Greek salad of raw vegetables, feta and parsley!
