Let us make the most of it while the summer vegetable season is still here! If you are a little tired of the tomato and mozzarella salads eaten all through the holidays, try something different with a new and perfectly simple recipe.
What you will need:
- a little mustard
- 2 or 3 beefsteak tomatoes
- 2 peppers
- 1 log of goat's cheese
- some herbes de Provence
- a little fresh parsley
- 1 sheet of shortcrust pastry
- 1 tart dish
How to make it
- lay the pastry in the dish, and set your oven to preheat to 150°
- spread 2 teaspoons of mustard over the base of the pastry
- slice the tomatoes and the peppers and arrange them on top. If your tomatoes are very juicy, drain off a little juice or the tart will be soaked and not crisp enough.
- slice the goat's cheese and lay the rounds on top
- sprinkle with herbes de Provence
- bake for about 30 minutes. It depends on the oven; the pastry needs to be thoroughly cooked.
- before serving, scatter a few fresh parsley leaves over the top
