Summer is the perfect season for long, convivial tables where the conversation carries on for hours by candlelight. What do we cook for these big summer meals? Simple dishes, vegetables, grilled skewers, a good rosé... Among the good summer vegetables there is the aubergine, easy to cook and always delicious, in the Mediterranean style above all!
A few simple ways of cooking aubergine (you will not need much: aubergines, olive oil, herbes de Provence, onions, garlic)
- Marinated aubergines in the oven - Cut the aubergines into moderately thin slices (keep the skin if your aubergines are organic) - Pour olive oil over the bottom of an oven tray - Lay the slices on the tray in the olive oil, then add more olive oil on top of the slices - Sprinkle with dried herbes de Provence - Cover the whole thing with foil or with baking paper (better) and put it in the oven (the paper is there so the aubergine does not burn, but marinates as it cooks in the olive oil) - Leave for 30 mins at 150 degrees, then take them out of the oven once they are meltingly soft
- Striped aubergines fried in olive oil Striped aubergines have more flavour than the others! They have a slightly sweet, delicious taste. - Cut the aubergines into large squares - Fry them in a pan with olive oil in the bottom, herbes de Provence and a little water so they do not catch - Cover and leave to simmer
- Aubergines and peppers browned in the pan - Same principle as the marinated aubergines in the oven: cut the aubergines and peppers into slices - Fry them in the pan in olive oil, with onions and garlic
To suit your taste, dress the aubergines with other good ingredients that are a pleasure to eat in summer: a little goat's cheese, fresh basil...
